Gluten-Free Summer Pasta Salad
An easy, gut-friendly pasta salad you can make in 20 minutes. It's light, fresh and loaded with supportive ingredients for digestion, perfect fro your meal prep!
Ingredients:
2 cups of cooked gluten free pasta (I use jovial foods)
1.5 cups of cooked chicken
1 cup of artichoke hearts
1 cup of chopped cucumbers
1 cup of halved cherry tomatoes
1/2 red onion diced
1 cup of arugula
2 tbsp of fresh basil
1/3 cup of extra virgin olive oil
2 tbsp of red wine vinegar
1 tsp of dijon mustard
Combine everything in bowl, chill for 30 min. Enjoy!
