Healthy Chili
Healthy Chili Recipe
Ingredients:
1 tbsp avocado or olive oil
1 cup diced yellow onion
1 red bell pepper (seeds removed and diced)
1 jalapeno (seeds removed and diced)
3 garlic cloves minced
1 lb of ground meat ( I used Force of Nature grass fed beef ancestral blend)
5 tsp chili powder
1 1/2 tsp ground cumin
1 tsp garlic powder
1 tsp dried oregano
2 tbsps of tomato paste
2 cups of diced butternut squash or sweet potatoes
1 14.5 oz can of fire roasted dice tomatoes
1 15 oz can kidney beans
3 cups of low sodium broth (chicken/beef/bone)
1-2 tbsp of freshly squeezed lime juice
To garnish:
sliced avocado
lime wedges
Instructions:
In a large pot, heat the avocado or olive oil over medium heat.
Once hot, add the onion and red pepper. Cook about 3 to 4 minutes.
Add the garlic and jalapeno, cook for about 1 minute.
Add the ground meat, until brown.
Once brown, add the chili powder, cumin, garlic powder,and oregano. Stir to combine.
Add the tomato paste, butternut squash, fire roasted tomatoes, kidney beans and broth.
Turn the heat to medium high, bring to a simmer.
Reduce the heat to low, cover and cook for 30 minutes.
Remove the heat, stir in the lime juice.
Serve the chili + add your garnish.
