Simple Spring Greek Salad
Ingredients:
2 heads romaine lettuce, chopped
1 cup chickpeas (drained and rinsed)
½ cup feta cheese, crumbled
1 cup cherry or grape tomatoes, halved
1 cucumber, chopped
1/2 red onion, diced
Dressing: (I like to make the dressing in a mason jar and add as needed)
½ cup extra virgin olive oil
¼ cup red wine vinegar
juice of 1 lemon
1-2 garlic cloves, minced
1 tsp dried oregano
salt + pepper, to taste
Instructions:
1. Add the romaine, chickpeas, feta, tomatoes, cucumber, and red onion to a large bowl.
2. In a small bowl or jar, whisk together the olive oil, red wine vinegar, lemon juice, garlic, oregano, salt, and pepper.
3. Pour the desired amount of dressing over the salad and toss until well combined.
Optional:
By itself, this is a great side however, if you want this for a meal, I would definitely add protein (ex. chicken or salmon)
You could also add olives to give the dish more healthy fats
You could also add quinoa, which would give the dish more carbs and protein
