Summer Protein Pasta Salad

Ingredients

For the Dressing:

  • ⅓ cup pesto (I used Gotham Greens)

  • ¼ cup olive oil

  • Juice of ½ lemon

  • Pinch of salt

For the Pasta Salad:

  • 1 box pasta (I used Brami for extra protein)

  • 2 cups cherry tomatoes, halved

  • 2 large bell peppers, diced

  • ½ red onion, diced

  • 1 cup peas

  • 2 garlic cloves, minced

  • 1 tbsp olive oil

  • 1–2 cooked chicken breasts, chopped

  • Red pepper flakes to taste

Instructions:

  1. Cook pasta according to package directions. Drain and set aside to cool.

  2. Heat 1 tbsp olive oil in a skillet over medium heat. Add onion and peppers and sauté for 5–7 minutes until softened. Add garlic and cook for 1 minute.

  3. Stir in peas until warmed through.

  4. In a small bowl, whisk together pesto, olive oil, lemon juice, and salt.

  5. In a large bowl, combine cooled pasta, chicken, sautéed vegetables, tomatoes, and dressing.

  6. Toss well and finish with red pepper flakes.

  7. Serve immediately or refrigerate for meal prep throughout the week.

  8. You can add as a garnish fresh basil or freshly grated parmesan

I love this recipe because It combines protein, fiber and healthy fats in one meal. This can be a great option for meal prep too!
